More engine advice needed

Thanks for the info on the last post need a bit more help.....
To follow up pistons were 3 7/16 so with the serial number looks like this is a surviving 1940 s Chrysler 251 CID engine. Not an engine original to the truck.

I brought it to the machine shop anyways to get it magged and a quote..... There is something neat about saving something like this from the brink.

The shops main concern is two exhaust valve seats have significant corrosion to the point of new seats are not expected to make up for all the lost material ( seat will sit proud and may not have enough meat to hold the new insert)

Any one have experience with oversize seats for exhaust valves. How big have you gone how deep can you go
