Maybe you aren't getting the head gasket to seal correctly? Are you reusing the original gasket?

The way I look at it if everything you've done to the valves was done correctly then something else must be leaking. To me that is either the head or the rings and the only thing you are playing with is the head.

Do you have the right gasket for your block? If your engine is a replacement it might take a different gasket then the one used by your year of truck. If you have the right gasket did you use a new one every time you took the head on and off? If not maybe the gasket is damaged? I had a great running flat head once and it just died going down the road. I fussed with it for a whole until I realized the timing chain had jumped a couple teeth. The gears were fine and with a new chain it fired right up and ran smooth. Have you checked the timing?
