I would start with the small one. As we discussed earlier as long as your brakes are adjusted properly each shoe is only moving about .030", so roughly .060" at the piston for each shoe for a total that approximates a single cylinder moving less than 1/2". The small master should handle that easily enough with reasonable travel and feel - if you think there's too much travel after you get it all set up you could then try the bigger one.
