are you asking about the valves themselves? they need to be ground until they have no wear groove. the seats grind until the pits are gone which usually takes only 5 or ten seconds. if you grind the seats too much then you need to learn how to adjust the height of the contact point. The more you grind the farther the valve drops down and you can end up with the valve contacting too high on the face
