I sliced it into bits. LOTS of water came out in the frying pan.

Pretty tender for what looked like shank meat. Maybe the salt did something good?

Interesting tacos, with home made salsa. Too bad I salted the salsa.

But I think I'll make stews out of the rest.

Meantime, next batch of tacos will be from the "tuna side strips" he also gave me. Seems to be the dark meat w/ skin on, and ribs inside. Not too strong tasting. He eats it as sashimi. But I prefer my fish tacos with the meat cooked.
