The Army grease test listed some of the drawbacks of marine grease. The Army could not find a marine grease that would pass their tests. Of course, that was back in the 80's.
I think that marine grease is good for boat axles that have Bearing Buddies or similar devices that allow you to pump in fresh grease to displace the water or are spring loaded to keep a constant pressure on the grease to seal out water. In situations like that, you are not concerned about the grease separating out.
