As other have mentioned, the reasons were to make it fit in the new-style low-slung cars, and to fit a better-breathing intake manifold. From what I've read, the leaning tower of power can really be souped up pretty good. It was also apparently the least-polluting engine of its day and one of the first with factory electronic ignition. It's been a mystery to me why no one else made a "slant" engine. Patent issues? I had a friend once who went the other direction on performance with his (in a Dart). It blew the rings or a hole in a piston or something on one cylinder so he just removed the rocker arms from that cylinder and drove it for years as a "slant 5". It seemed to do fine.
