Well, if it happened after you took the drums off, maybe the drum imbalance was countering the wheel/tire imbalance, although, I doubt it.

No need to do the wheel bearings again. If they are causing a problem, they are too loose. Just raise the truck and grab the wheels at the 3 and 9 o'clock position and wiggle the wheels. You should feel no play. Do the same thing at the 12 and 6 o'clock positions. Look for movement or play all along the steering path.

Also, have someone rock the steering wheel back and forth, just the amount of the steering wheel play, while you watch to determine where the looseness is. The steering wheel should have just a couple inches of play, but maybe a little more is to be expected on an old truck.

Really, your problem is pretty much limited to looseness/wear in the steering system or wheel/tire problems. It may also be a combination of existing problems which reached a critical point when you changed to disc brakes.

The people that work on the fire trucks should be an excellent resource in helping you solve the problem. If for no other reason than helping you brainstorm.
