I've never had that happen. If they were new-ish chains you could blame it on some little chinese girl using too much high carbon scrap.
Chains seem softer than they used to be but still they shouldn't be breaking when you spread the links. Makes me wonder if you are working in extreme cold, or maybe there's metal fatigue.
Only other thing I could think of is if someone built your set by heating the connecting links and cooling real fast with water or snow. Seems unlikely but that might make the steel brittle.
I'd be tempted to heat the links to bend them, maybe quench in grease after the repair to get some temper...?
