The tire world is yoo limited in all sizes, in my opinion. I have an '06 Dodge 2500, which came with and requires 17" wheels. There are lots of 17" tires out there, but, like the 16", they are all wider than I prefer. I found the Toyo Open Country tires sold by Les Schwab to be the best in snow, mud, and ice, all of which are pretty common here in Idaho, and they wear great. Only problem is the width. If you ever hit a pool of water on the highway, twice as long as the pickup, at 60 or 70, you know what I mean. They turn into pontoons and can generate a pretty scary ride.
The "old" Buckshot QR78-16 tires, by Denman, were fantastic. I still have a set on my
'68 W300 and my '66 F250. Great traction, wear, 35" tall and they are only about 9" wide. The "new" version doesn't wear as well and the rubber is too hard for good traction on ice.
Anyway, it seems to me the tire industry is mostly interested in eye candy for the urban cowboys with 4x4 pickups that will never see anything more rigorous than a speed bump in the local mall parking lot.
