Those usually get moly grease, it builds a layer of moly in the parts.

I used to use a two pound coffee can to dip the pistons in before insertion. But flat head pistons might fit in a beer can.

Priming just before starting is a good idea too, to fill the oil passages. On many engines you can drive the oil pump with a drill, if you can hook the two together. But on a flat head, with the drive gear on the pump instead of the dist, you'll need to come up with some sort of system to blow oil into an oil galley plug. Maybe just temorarily fiddle with the plumbing on the filter canister?
