If you have (or had) a heater, the add on knob above the small information plate is probably the heater on and off switch that someone added. If not, most likely, someone added a light somewhere. The plate as, pointed out below, has nothing to do with the knob.
The missing knob between the ignition and headlight switch is where the choke originally went. The white knob is probably a replacement choke.
