Affirmative on the fuel gauge and sender. M-series trucks have color-coded voltmeters rather than ammeters and the voltmeter scale is compressed such that 12 volts barely registers while 24 is in the yellow-to-green range, so even though leaving the 24V gauge in place wouldn't hurt anything, it wouldn't be very useful either.

A theoretical difference is that the wiring is sized for the lower current of a 24 volt system, but in reality it seems adequate for 12, with the exception perhaps of the starter cable.
