Not very. The M37 cab is very square on the bottom. Plus, they're getting scarce and expensive. You see a lot of M37s with other military arctic cabs (CCKWs?) jerry-rigged onto them with wooden filler strips. Once you have to start cutting and adding filler strips, I suppose anything would do, with the same amount of effort. Maybe a canvas top for a side-by-side ATV could be made to at least keep most of the snow out for the duration of a winter. Would be easy to bend bows out of 1/2" conduit.
