Clark, try to not nick the parent metal. Leave some of the weld on it then get some flapper sanding disks for your new mini grinder to smooth it out. You will be amazed what you can do with them.
Start out with the flat ones they aren't as aggressive. I like to start them on a piece of scrape to knock the rough new edge off before trying to do any finish work. I would also try to use the guard while your cutting with the cut off wheels, your fingers are too close for a kickback. You can remove the guard for the flapper disk and lay them flat while grinding and get a nice shinny surface.
