You need to just cool your heels & wait for a descent cab. They sell for cheap...$250 for a rust free cab & they come up all the time if your patient.
You have to remember that once you pull the whole truck apart...that's a big job & it's worth doing properly. Once you put an M37 cab or Duece cab on there...you may as well mount a Datsun 510 on there because either way it'll be worth zilch & you'll be into it for lots of time & money.
The first truck I restored I had a new roof welded on & it was a big undertaking to do it properly. It took about 100hrs & as soon as I got it finished, I'm not kidding you...I had my choice of about 10 nice rust free cabs. The biggest obstacle will be getting it because depending where you're located...you don't want any body parts from the East...go West son :)
