We have eaten several black bears over the years. Most of them were good,like everything it depends on the age and diet.
The meat is similar in texture and flavor to beef. There is more fat in it like pig best to eat hot.
I think it is a shame to just take the head and cape and leave the meat.
Now brown bear is another story, very foul and stinky. Take the head and cape and let the birds have the rest.
