I always install a mechanical temp and oil pressure gauge (if not factory equipped) on my old iron. Learned the hard way with an electric oil gauge and a 440. As far as the thermostat, I was always told to run one because otherwise the water runs through the radiator too fast not getting a chance to cool down.
