The starter doesn't care about polarity. The coil theoretically cares but in practice, for getting it running to move around the yard, it doesn't much care either.

Just be sure you disconnect the fuel gauge before you do any of this. I've seen too many 6 volt fuel gauges burned out because somebody did a 12 volt conversion on the truck and didn't reduce the voltage to the fuel gauge. In fact, I've never personally seen a 6 volt fuel gauge that WASN'T burned out.
