It is normal to find a bunch of crud on the underside of the valves when doing an overhaul. If the stuff is black and greasy it could indicate bad valve guide seals or guides. Especially if it only is black and greasy on a few cylinders. I would expect the guides to be worn on an old engine. If the deposits are hard then it is probably normal. A big wire wheel will clean this stuff off.
