I don't believe type L plumbing pipe is any harder than type M. What it is is thicker walled. All the straight copper plumbing pipe is hard-drawn, which means it's work-hardened when it's drawn and is not annealed. All the coiled copper plumbing pipe is soft, which means it was annealed after drawing.

All copper can only be hardened by working it (not by heating and quenching like steel), but it can be softened (annealed) by heating, no matter whether it is cooled quickly or slowly. Ordinary tin/lead soldering temperatures are not hot enough to soften hard copper, but hard silver soldering, like the AC repairmen do, will soften it.
