I don't think it's that kids aren't interested in the older vehicles. It's just that they don't have the money, time, or space to keep a toy, which in reality is all a stock antique vehicle older than about 30 years or so is.

I'm 34 and have a good job, and while I love the looks of the Power Wagon, I just don't have the space and time for a vehicle that I can barely use for more than Sunday drives, which is why I'm doing the resto-mod. And even my ability to support this hobby is partly because I have no wife or kids that require my time or money.

Kids are buying the small cheap cars because that's what they can afford to buy and run. The gear head kids might have an 80s mustang or camaro that's been hopped up, 70s or 80s trucks are still failry cheap, powerful, streetable, and easy to work on, and even the old rice burners are still cheap, reliable and have the aftermarket support muscle cars did during their heyday. But the market is too expensive for them to play with a real muscle car, let alone something older that struggles to get to even slow highway speeds, let alone the fact that most are missing even basic comfort items you would get in a cheap used car today.

So I guess the short version of what I'm rambling on about is that if an all electic Nissan Leaf is the far future end of the bell curve of cars, a stock Dodge Power Wagon is slowly creeping further to the other end of that curve. Some people are willing to pay to be at one end or the other, but the majority of the market has to live in the middle, whether they want to or not.
