Strange Problem Has Me Confused...Cummins Guys???

So my First Gen water pump was leaking from the weep hole. I went to Napa & bought a jobber water pump & pulled the old one off this afternoon & changed it...simple job right?
So I fill it back up with water install the belt & figured I'd fire it up & run it a while to let the air bleed out of the system.
It's running for about 5 minutes & I'm adding anti freeze as the water fills the engine.
All of a sudden the most god awful noise coming from the Thermostat/AC compressor area...sounds like a fog horn! I ran to the key & shut it down. So the noise continues & I can hear that something has pressurized...like an air lock or something & the noise gets quieter & quieter until it stops...maybe 15 seconds.
I go up front...scratch my head & look over the whole motor...all looks good. start it again...maybe 60 seconds...same thing. i run to the cab & try reving the engine...same. Turn it off & same deal...noise bleeds down & coming from thermostat area.
So the obvious culprit seems like the thermostat but why would it be any different than an hour earlier when it ran fine...other than the water drip when cold from the water pump?
So I pulled the water pump back off...just on the off chance the water pump they sold me had a reverse direction impeller or something...nope. The only difference is a slightly different impeller. Rather than an open impeller like factory, the new ones have a round ring welded to the outside. I'm told by a Cummins guy that the new pumps all have the updated ring & it's not that.
Any ideas?
A thermostat is a simple job other than a 2hr drive to Cummins & $65...just seems weird when it was working fine with no temperature issues.
I should take a video...I've never heard anything like it.
I think next time I'll start it & ad the water while it's running.
