There's a reason normal gaskets are thick -- so they can compress and accommodate unevenness. Paper-thin gaskets serve as shims and are meant to be stacked up. Maybe you need more of them.
You're too picky -- a greasy truck is a happy truck. I tend to put in just one, unless I need more for shimming, and I accept some leakage.
Modern oil is runnier and goes through the paper more than old oil did. I have no idea if that's true. I just made it up.
Modern paper is more porous and lets more oil seep through it than old paper did. Same thing as above.
