Chris, cast iron has a lot of free carbon in it, the very best grades of cast iron have very small pieces of carbon, the cheaper or older iron has some that are "chunks", so depending on the quality when cast depends on what it behaves like a hundred years later. the more thermal cycles it goes thru, the more carbon is released from the iron until it is honey combed, very,very small mind you, but still honey combed. would good ole hog fat seal it better maybe, I havn't tried coconut oil so I have nothing to base an opinion on, but I've used a lot of hog lard and it seems to do well.
