When I bought my 5hp compressor, I had the choice of two models: One had a 125 PSI max and the other 175 PSI max.

The 175 PSI machine has a smaller pump displacement allowing the 5 HP motor to reach the higher cutoff setting. The 125 PSI pump has more displacement so it can pump more air, but at lower air pressures. The machines were otherwise identical.

I got the 175 PSI machine because it was on a closeout special. I think most people wanted the higher volume of the 125 PSI model and the high pressure machine was not selling well.

I find I almost never need 175 PSI, but I could occasionally use more air volume.

If you want to spend enough money you can get the best of both worlds: high pressure and high volume. But, at the 5HP non-commercial level you're probably going to have to compromise.
