In most cases, valet parking is operating your vehicle with your permission. You might be liable for the damage to that Cadillac. The restaurant or whatever that has the valet parking has disclaimers posted and a full time staff of lawyers. Those lawyers might be named Bill and Hillary. You could lose your truck and your sofa.
