No matter how big you make it, it won't be big enough. Depending on your future plans. I'd recommend thinking about 6 inches of concrete in the floor. A drain is nice too with a slight slope towards it. Some put a pull point in the floor as well.
Exhaust fans a good thing. I wired mine for air conditioning but never put it as the fans are fine. My floor was allready in place but I'd put radiant floor heat in if I was doing it from scratch.
I'd highly recommend going overboard with electrical outlets. I've put in 40 110's and 10 220's. You have a lot of options that way and it's cheap and easy when you are putting them in. I put alot of stuff on wheels so I can move it around for cleaning and such. Reel hose and electric cords are great as well.
