It is likely that an 11.00R20 tire is going to need a wider rim. I expect those wheels would be best with 7.50-20 or 8.25-20. 9.00-20 would probably be pushing it for the rim width.
Regardless, no easy way to adapt 5 on 8 pattern to the 5 on 6-7/8 but I suppose one could make some basic indexed adapters since the lug count is the same.
Search "Bryan Sage" and/or "20 wheels" on the forum archives for info about fitting 20" wheels on a PW, there are multiple options.
