Don't know any videos per se but a lot of web sites out there covering Chrysler engine rebuilds.
I feel that most people can re-assemble an egine such as the 230 or 251 without much problem providing the machine work is done by a competent shop. Make sure the usual things are done and ou maight even have them inser the valves, pistons on rods or other things. But themore you do, the more you save. Make sure you stay organized, keep a clean work environment, use plenty of assembly lube, have the right-high quality tools, ie., dial indicator gauge to measure runout, and folow any number of illustration- directions you can find on the web. I recently assembed a Willys 134 f-head w/o problems.- good luck
