Read an article that said, basically, don't worry about all that stuff. Grade 8 fasteners are much stronger than 5 (duh) and that there is no such thing as failure due to brittleness or lack of elasticy anywhere within the rated load limits of U.S. fasteners.
Apparently, the only reason not to use grade 8 would be cost.
