Bolts are graded primarily on their strength and to a lesser degree on application. There are a lot of sites with information on bolt grades.
More interesting, is the european grading system. Their grade 10.9 is about equivalent to our grade 8. In the grade 10.9 bolt, the 10 is eqivalent to the strength in mega (I believe) pascals. The 9 indicates that the bolt will begin to deform at 90 percent of the first value.
