I've used many dual set-ups over the years and in my experience dual single barrel downdraft carbs properly set up with the correct throttle linkage are simple to maintain and pretty much trouble free. Main criteria is to have a common throttle linkage between the carb butterflies that doesn't get messed with once it's set. In most cases I found the choke system only needed to operate the fast idle sector, although one set-up needed a choke butterfly on one carb for winter starts.
