What I would do is, plane the head, this eliminates low spots and any increase in compression helps the modern fuel to burn properly, make sure you use a gasket jointing compound like Hylomar spray (or similar) to glue the new gasket in place. You don't need to do the whole gasket, just the problem areas and make sure you follow the directions on the can.
