OT Pole Building Help

I am in the process of putting up a pole building for my trucks. Being that the HVAC business is in the toilet I am trying to do it by myself. My plans call for 48" deep by 24" wide holes for each pole. This comes out to about 160 cubic feet of concrete (10 holes). Is this excessive? Secondly what is the best way to keep all the poles straight and level while pouring considering it will be just me doing the work?
