Restoration, how stock?

Im in about the 2nd month of restoration on my 78 PW 4x4 1/2ton. So far I have torn out the dash. I have the main instement panal painted and all nice gauges in it. I have a stock radio, hard to find now, all the dash is in great shape. Im goning to recoat the dash and door pannels with interior vinal/paint im not sure what to exactly call it. Im gona replace all the carpet and have the seat redone. In the engine I have resealed valve covers, oilpan, put a 750cfm Holley Carb, and intake manifold/new. Replaced all hoses and wires. I have put all nice trim back on it and im going to have the dents taken out and painted Black Cherry with Black two tone inside the trim.

What else should I do to make it a small restoration? I am going to tear everything out of the engine compartment and rebuild it all fresh with the engine painted and all parts. The only thing not stock is the 440 V8 from a 72 chrysler new yorker. How much could it be worth, im not selling.
