I think it is because these trucks were historically two wheel rear drive trucks that were converted to 4 wheel drive by adding a front drive unit. We accepted reducing steering and handling for the increased traction of 4 wheel drive.

As someone else pointed out, many newer all wheel drive vehicles are basically front wheel drive designs that have an added drive unit in the rear.

The newer designs that have ironed out the problems with having the same axle provide both steering and power.

Regarding your questions about having front/rear/both transfer cases: That is just what many high end all wheel drive cars have with their computer controlled transfer cases.
