I would do as Jerry suggested and use a penetrating oil that way the wood is protected and you can always put on more coats to give it the wet look.
Since you are using a hardwood(the harder the better) the wood itself will hold up quite well and the oil wll protect it from cracking and checking.
If you use some sort of hard clear coat(epoxy or otherwise) the metal strips will wear on it and more than likely cause problems.
