Robert,

-Air dry if you have the time with stickers.
-Kiln dry if you want to use it sooner, or to get the air dried boards closer to a useable moisture content(about 5-7%).
-Air drying is slow, approx 1" per year and climate is a huge factor.
-Keep in cool dry area if possible.
-Cracking/checking/warping can come from drying to fast or uneven moisture content.
-Many feel that you seal the end grain after drying to allow moisture to escape.

IF YOU CAN, quarter sawn wood is more stable and has more attractive grain. there is also a little more waste. Look up how to quarter saw a log.
