I used 4' x 8' FRP (fiberglass reinforced panels) for the ceiling. The sheets are sold for wall panels, but when attached at 18" centers to the trusses, there is no sagging. I put fiberglass bats between the trusses, then put up the sheets. The panels are white, waterproof and fairly glossy, so they reflect light well and can be hosed down to clean. The material is rated as "fire resistant".
