That's not a bad idea. My neighbor finished his garage with 3/8 ACX plywood and 1x4 battens over the seams and it looks great. The ply was $20/sheet, plus figure another 3 or 4 bucks for the 1 bys, so it wasn't cheap. It's not fire-resistant either, although it's better than exposed kraft-faced insulation like I see in some garages. If it was mine, I'd varnish it to keep grease and oil from soaking into it.
