The modern Chrysler engines that are rated for E85 use a VERY hard material for the exhaust valve seats. I’m not a metallurgist so I don’t fully comprehend the break down of standard seat material during extensive E85 use, but I can tell you it isn’t pretty. Standard unleaded exhaust seats will pit very badly under high rpm & loads. So I can only imagine what that extended use of high concentration alcohol/ethanol would do to valve seat designed to be lubricated with lead. Possibly with the proper fuel additives & the low engine speeds you see in a flat head it might be fine. Biggest change you would have to make is to up your main jet size in accordance with the concentration of alcohol. The alcohol with make more power but it will take approx 30% more of it to do so. If you run it as set up for standard gas your sure to be running it too lean aka: fast way to burn valves.
