Even with a open rear end (no L/S), you can spin both rear tires if they have exactly the same amount of traction (or friction between the tire and the ground). As the traction difference between the tires is greater, a L/S is more likely to slip. If you are in mud or snow, there isn't much traction, so a L/S can usually easily spin both tires. If you are rock crawling, and have 1 tire wrapped around a rock and the other tire up in the air, the L/S could easily slip.

There are many different types of L/S. The GM posi, Trak lock and power lock are a few L/S that use friction clutches. It is just a spring loaded clutch pack between the axles. I have heard these can wear out in as little as 30k miles. Another type of L/S is the Detroit True Track. It uses gears that bind together which acts like a L/S. Although with a True Track, you have to use the brakes to get it to lock up.

True lockers operate completely different than L/S, and I know some muscle cars had Detroit lockers.
