with the higher rpm of the v8 you can go a tad faster but all hell might break loose with the 7.50 at higher speeds, if you run the 9.00 with the 4.89s highway driving will be a bit more bearable.
9.00 duals will not fit properly on the 7.50 rims
I think duals look great on ff flat beds and give a bit more load capacity even it they were the 7.50s. However the 9.00 give better ground clearance and a truer ff look.
How fast can you go now before all hell breaks loose as is and if you are comgortable with that I would stick with the 7.50s with the duals in the rear until your pocketbook warrants an upgrade either to larger wheels and tires or an overdrive unit.
