Use the recipe from Alton Brown, salt sugar, vinegar, water, and I add molasses. Soak in a zip lock on the counter, 1 1/2 hours.
Cook in a frame on a rotisserie over a gas flame. Sear one side over fullest flame,, plug in the motor, turn 180°, unplug motor to sear other side, turn off heat under meat, other side to low, roast 1 1/2 hours on the rotisserie.
No sauce on my meats please. I know, it ain't bbq, but I am a meat purist. T like the sweet crispness of the 'skin', the texture and taste of real meat. And if I want sticky fingers, there are other pass times to engage in.... like overhauling transfer cases. ;)
