Thermstats don't cycle open and closed. However they do vary in the amount they open depending on the temp of the water from the radiator entering the block. This is to maintain a constant engine temp. Usually a bad thermostat will cause coolent to gush out, then stop and gush again from high engine temps, or allow the engine to overhead at high temps. A simple test is to remove the thermo and run the engine w/o it see if the same symptoms appear. If they don't, bad thermostat, if they do, something else. If your using the stock radiator, could be a cap issue. Check for bubbles in the coolent indicating head gasket leak.
