Thermostats 101

I was driving my Power Wagon today and it was overheating. The temp gauge (mechanical aftermarket) was reading 190, yet I was blowing antifreeze out around the radiator cap. Naturally it was worse going up hills, even when I would take it really easy and slow. Not a lot of antifreeze, and no steam, just enough puking out around the cap to blow back onto the windshield.
I was talking with a friend about it and he suggested perhaps a faulty thermostat. Easy enough to replace on the 318. He said, and I have never heard this, that thermostats open, and cycle closed, then open again, etc etc. I always thought they reached their rated temp and stayed open until it cooled down and then they closed. so which is it?
I also think it is running rick, it would seem that it would run hotter when running rich? Yes?
All suggestions appreciated!
