Of course you have removed the pads and cleaned off any bad stuff. A small rock could be wedged into the brake assembly and be forced into the rotor when the brakes are applied.

Calipers are mounted so they can be self centering on the rotor. If there is any rust or corrosion in the caliper mounting bolts, they may not be free to move to center. This might put the braking load on the pads on just one side in the caliper, which could result in the the caliper being "stuck" on the side that shows contact with the inside of the wheel.

I would remove the wheel (might as well do both sides) and see if the caliper(s) move freely. Make sure the caliper bolts are rust free and lubed with the appropriate grease.

This is likely to occur when your truck is not a daily driver or had been driven in deep water or mud.
