Yes. That is the way the original bed wood was cut and assembled. As you described, 2 or 3 pieces were edge glued to make up each "board" between the bed strips. I have seen these as narrow as one inch. The widths of the individual strips were unequal and the joints were seldom parallel to the bed strips.

I wish one of the bed wood reproducers would cut their wood this way. I am thinking about either making my own or taking a "kit" and resawing it, then mixing and matching to make the proper edge glued pieces.

You may have noticed that old bed wood is seldom found to be warped. It may be rotting and falling apart, but not often warped. I believe the technique of edge gluing narrower strips to form the wide boards probably had something to do with that.
