Could try jacking up the truck and searching for any dragging driveline pieces and parts: brakes, wheel bearings, u-joints, ect...A bearing going south when it gets hot in your transmission or t-case can knock the top off any fuel mileage figures.
If your reasonably sure the engine is behaving itself, SOMETHING is putting up a fight to drag your truck down.
